Cooking - 70 Years Ago

June 7, 2019
Emmetsburg News

Barb Currans' 1948 cookbook "What's Cookin'??in Palo Alto County" was published by the Veterans of Foreign Wars Auxiliary #2295, Emmetsburg.

The book is in remarkable condition. It is spiral bound with a bright green cover. Inside is an "Expression of Appreciation" thanking people for submitting recipes and encouraging cooks/readers to patronize the sponsors who made the cookbook possible.

A sampling of the recipes include:

Salad Delicious?submitted by Mrs. Monica Cullen High

Cherry Salad?submitted by Mrs. S.J. Torkelson

Mrs. Charles Davis sent in Date Filled Cookies

Mrs. J.H. Walsh sent in a recipe for Peanut Cookies

Butterscotch Slices from Mrs. Edith Smith

Mrs. Frank Ralph sent her recipe for Dream Bars

Nettie Molison submitted her recipe for Dream Bars, as well as a recipe for Nut Patties. The Nut Patties, she says, are "something like macaroons."

Mrs. Luelle Frisbie sent a recipe for Banana Cookies

Banana Burnt Sugar Cake recipe came from Mrs. Pearl Armstrong

Ruth McKinney's recipe for Chocolate Icing

Orange Cake form Mrs. Frank Weisbrod

Graham Cracker Ice Box Cake from Mrs. Chas. Davis

Ellen Heng submitted Brown Sugar Frosting and Ann Sampson had a recipe for Boiled Icing

The recipes are close to the way we cook today (minus a microwave for softening butter or something).

The recipe for Banana Burnt Sugar Cake called for burnt sugar. Now that would be a puzzle for me. I've burned a lot of food in my life (mostly due to inattention) but I do not know how to make burnt sugar.

One recipe says "mix in usual way" - at which point I would have to just quit! These ladies seemed to assume that people using this book can cook and/or bake.

The recipe for Peanut Cookies calls for peanuts with skins left on. Some of the recipes refer to the refrigerator and others call it an ice box. Do you think we can find a 10-cent bottle of stuffed olives on the grocery store shelves today?

The names of sponsors are familiar, especially to lifelong Emmetsburg area residents.

Cookbook sponsors on the back cover are:

H.V. Wilson &?Son, Plumbing and Heating; Curran's Garage, Complete Automotive Service, 24 Hour Towing Service; Iowa Trust &?Savings Bank, "A Home Owned Bank For Home People"; and Wigdahl Bros. Hardware, Appliance, Heating, Refrigeration, Air Conditioning, Emmetsburg and Ruthven. Each had a two-digit telephone number, except the garage had a night phone number of three digits plus a letter of the alphabet. Some of the other sponsors are Mallard Lumber Company; Critz &?Company, Curlew; Baker Lumber Company, Emmetsburg; McNally Cleaners, Emmetsburg; and Wm. J. McNamara, Real Estate, Insurance, Loans, Emmetsburg.
